My daughter was recently diagnosed with type 1 diabetes. As
soon as we got the confirmation from the doctor my mind started racing with
recipe ideas. I am no chef, but I do love to bake. I couldn’t stand the idea of
giving up on my love for baking, and my heart broke when I thought about my
little one (who is not so little) having to give up her love for sweets and
delicious food. This blog will be a REAL account of my kitchen adventures in
living with T1D. I have had some wonderful successes, and some full out
disasters. Hopefully you can learn from my mistakes and share in my successes!

FYI: This is NOT a diet blog. These recipes are
not low calorie, and they are not low fat. All I care about are natural foods that
taste delicious and are low in sugar/carbs.
Let’s start of with the easiest recipe I have come up with.
And in the words of my daughter, “The best strawberry milk shake ever!”
Strawberry Dream Milkshake

1 cup frozen strawberries
·
1 cup almond/coconut blend (pictured below)
·
1 heaping tablespoon of erythritol (or any other
alternative sweetener you like)
·
½ cup of yogurt of your choice
Blend all ingredients until smooth
Exact carb count will vary based on the sweetener and yogurt
you use, but mine had 8g of carbs !
I bought this almond and coconut milk blend on accident. I wasn't paying attention and thought I was buying plain almond milk. Boy was a pleased with this little mixup!
